Why Don't We Have More Half Bottles?

I love half bottles! They are perfect-sized for trying out different wines and much easier to finish than full-sized ones. I've been into white wines recently (must be a summer thing) and have been looking for a new California Chardonnay to try. I was pleased to find the McRostie Chardonnay from Sonoma for just $13 (full bottle retails for ~$20).
My tasting notes on the 2017 MacRostie Chardonnay:
See: The wine has a medium gold color - shows its time in oak.
Swirl: It has some long, slow-flowing legs. It's also on the higher end of alcohol at 14.5% abv.
Sniff: It's delicately fragrant on the nose with ripe peaches, mangos, and honey. It's also buttery and oaky with notes of caramel and vanilla.
Sip: The wine is medium-bodied with moderate acidity. It's dry on the palate with juicy, ripe stone fruit flavors.
Savor: The finish is smooth and buttery with notes of buttered popcorn and toffee. It's a rich and elegant wine with nicely balanced freshness and nuttiness. The wine has just a touch of oak, which doesn't overpower, and still has brightness of the fruit. I had this wine with roast duck, which was actually a decent pairing, but I think it would be perfect with light cheeses like brie or a seafood pasta dish.
